Description

  1. Allow the pork to come to room temperature.
  2. Fill the BBQ to the brim with large coals and light them.
  3. Mix the powders for the dry rub and massage them into the meat.
  4. Once the coals are lit, close the BBQ and heat it to 120C.
  5. Regulate the temperature by means of a heat shield and the air supply.
  6. Now place the pork neck in an oven dish and place on the BBQ.
  7. Insert the core thermometer.
  8. When the meat reaches 87C it is done, if necessary let it cook for longer up to 7 hours so that the meat falls apart nicely.
  9. After 7 hours, remove the meat and let it rest in aluminum foil for 20 minutes.
  10. Then you can 'pull' the meat using 2 forks.
  11. Serve the meat on a bun.
  12. Garnish with BBQ sauce, fried onion, silver onion, and parsley.
