Description

[/vc_column_text][vc_column_text]Preparation:
  1. Mix the coriander, lime, red onion, red pepper, garlic, cumin seeds & olive oil in the mortar.
  2. Remove the membrane from the picanha. It can be quite tough.
  3. Cut the fat layer of the Picanha into thin slices.
  4. Rub these cuts with coarse sea salt, black pepper and the rub.
  5. Do the same with the bottom of the Picanha.
  6. Allow the marinade to soak in while you light the BBQ.
  7. Place the heat shield.
  8. Preheat the BBQ to 110C.
  9. Place the Picanha on the BBQ.
  10. Insert a core thermometer.
  11. Cook until 60C.
  12. Remove the Picanha from the grill and preheat the BBQ to 220C without a heat shield.
  13. Now grill the Picanha on both sides for 1 min.
  14. Be careful that the meat does not burn due to the flames that arise during the grilling of the fat layer.
  15. Let the meat rest for 5 minutes.
  16. Now you can cut the meat.
